Experiencing freshly milled flour is like an epiphany. It is completely transformational. We've become so accustomed to lifeless commercial flours (designed to be shelf stable) that we rarely get a chance to experience how amazing freshly milled whole grain flour can be . Fresh milled flour literally makes your baking creations come alive with flavour, aromas and nutrition. At Black Fox Flour our purpose is simple: to nourish. Our mission is to produce phenomenally fresh flour from amazing BC grown organic grains to illuminate their incredible flavours, aromas and nutrition. The key to our phenomenally fresh flour is that it is stone milled just for you when you place your order. By milling the flour to order and getting it to you as quickly as possible (i.e. within days of being milled), you get to experience all the incredible flavour, nutrition and aromas of the whole grain the way nature intended. It is for this reason why we also focus on the most incredible BC grown organic grains for our flours and have included both heirloom and ancient grain varieties. In addition, our traditional hand crafted stone mill slowly mills the grain at a low speeds and temperature, which further contributes to retaining the freshness, and illuminating the flavours and aromas of the whole grain in our flours.
If you bake regularly, the fresh milled flour can be stored in your pantry for 2-3 weeks. If you'd like to keep your flour fresh for longer you can store your fresh flour in an airtight container in your fridge for 1-2 months) or in an airtight container in your freezer for 3-4 months).
In our whole grain flours, everything that is in the grain is in the flour. For our semi-whole grain flour, we sift out the coarsest parts of the bran (<20%) , but still leaving finer parts of the bran and all the other parts of the grain in the flour (which contribute to its amazing flavour, nutrition and aroma.) The coarser part of the bran are sharp and don't allow the gluten to form as well in the dough. As such this finer semi-whole grain flour, allows for better formation of the gluten which is particular nice for breads.
Due to COVID, we don’t have the mill open for pickup but we are able to continue to operate by offering free local delivery for orders over $35. (10km radius from downtown Prince George). Our flour is milled to order (to ensure peak freshness) and we mill the first and third Wednesday of every month. You just need to place an order the Tuesday before the milling day and we will deliver after it's milled.
We are passionately focused on getting you the freshest milled flour possible. We've purposely focused on our e-commerce store as it provides the best solution which enables us to get you the freshest flour in the shortest amount of time (from ordering, milling, shipping and delivery).
At this time, we don't mill gluten free flours. All our flours will have some form of gluten.
That being said, all are milled from BC grown organic grains, and we have several varieties of ancient grains (i.e. Einkorn, Spelt and Khorasan) as well as a Red Fife which is a heritage grain. Many people with sensitivities to gluten (from commercial flour) do better with these as they are more easily digestible due to their less complex genetic structure. That being said, if it is related to an issue of gluten allergies, it's best not to risk it.
At the moment, we only ship within Canada.
Currently our flours are milled-to-order on the 1st and 3rd Wednesday of each month and shipped the following day. For example, if you order on the first Tuesday of the month, your order will be milled the following day (Wednesday), and shipped to you on Thursday. The shipping time depends on where you are located, but generally takes between 3-5 business days to arrive. Delivery details will be provided in your confirmation email.
We use Canada Post for shipping across Canada, and we personally deliver local orders (i.e. 10 km radius of downtown Prince George which is free for orders over $35).
