We're delighted to add durum flour to our collection of freshly milled specialty flours.
Durum wheat is the hardest and highest protein of all wheat, which provides ideal properties for making pasta and also makes great flatbreads and pizza crusts. Durum's unique yellow endosperm contributes to a deep golden hue particularly in pasta. It can also impart a wonderful texture and flavour in breads when blended with other flours that are higher in gluten (e.g. hard red spring flour).
Durum is rich in fibre and is a good source of protein, iron, thiamine B1, niacin B3, magnesium, zinc and copper.
Our whole grain durum flour is milled from BC grown organic durum wheat and provides wonderful flavour and nutrition in:
- fresh pasta
- pizza crusts
- artisan breads
